This second-hand chef knife has been getting a thorough facelift. It has been extensively thinned, exposing much more of the core steel. The edge was sharpened using a series of Japanese whetstones, finishing of with a jnat finish of 3000 grit.
The octagonal handle is made out of walnut and reclaimed teak, with an elm spacer. The saya is custom made out of reclaimed sapele wood, a type of mahogany.
The choil is now polished, hopefully making it more pleasant to use.
