This used chef knife has been thinned with whetstones and resharpened using Japanese natural stones. It also has a repurposed wa handle, which has received some beeswax oil.
It has a core steel of Shirogami #2 with steel cladding. This steel has a nice hardness of 61 HRC and is very responsive to whetstone sharpening. It has a great edge retention. The blade will develop patina over time, and potentially rust if not kept clean and dry.
Since the edge is symmetrical, this knife is suitable for left-handed and right-handed users.
