Upcyclet Sukehisa Minamoto Gyuto 180 mm med håndlavet saya.

Sukehisa er en klassisk japansk producent. I 1952 kom Masayasu Yoshimito i lære som 15-årig under sin far og begyndte at producere denne knivserie i 60’erne. Denne upcyclede kniv er sandsynligvis fra 80’erne.
Denne knivserie er lavet af japansk kulstofstål og har en tynd slibning med en solid hårdhed på omkring 60 HRC.
Bladet er tyndet ud og derefter slebet ved hjælp af en række japanske slibestene. Sayaen er lavet af genanvendt eboniseret sapeltræ, hvilket er en mahognitræ. Det nye skæfte er lavet af genanvendt teaktræ og messingpinde.

Bemærk: Kniven er brugt og har nogle ridser langs klingen.

Upcycled Sukehisa Minamoto Gyuto 180 mm with custom saya.

Sukehisa is a classic Japanese maker. Masayasu Yoshimito, apprenticed in 1952 at age 15 under his father, and started producing this line of knives in the 60’s. This upcycled knife is likely from the 80’s.

Made from Japanese carbon steel, this old line of knives has a thin grind with a nice hardness of around 60 HRC.

The blade is thinned and then sharpened using a series of Japanese whetstones. The custom saya is made from reclaimed ebonized sapele wood. New handle is made from reclaimed teak and brass pins.

Note: It is used and has some scratches along the blade.
